CALIFORNIA-STYLE CHICKEN

May reduce amount of garlic

INGREDIENTS:
- 1 chicken, cut in 8 pieces (about 3 pounds)
- 2 teaspoons olive oil
- 1/4 cup chopped fresh basil leaves, or 2 teaspoons dried basil
- 1 tablespoon chopped fresh oregano leaves,
or 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 40 cloves garlic, separated, peeled
- 4 ribs celery, cut into 1-inch pieces
- 1 cup chopped onion

Cereal Question

Hello,

My name is Stevi White and I live in Memphis, TN. My husband is a diabetic and
I am so glad that I found this group. I hope to share and get recipes from you
all as well as build friendships. I do have a recipe question though. Do any of
you have a suggestion for a cereal that is store bought that can be eaten as
well as some good snacks, for when his blood sugar drops?

2 cups egg substitute, or 8 eggs
1/4 cup reduced-fat (2%) milk
Salt (to taste)
Pepper (to taste)
3/4 cup shredded reduced-fat Swiss cheese
1 cup cooked trimmed asparagus, cut into 1-inch pieces
1 cup frozen, drained peas
Olive oil-flavored cooking spray
2 Tbsp reduced-fat margarine, or butter

1. In a large bowl, whisk egg substitute, milk, salt, and
pepper until blended. Stir in cheese, asparagus, and peas.

One of the best ways to cook fresh asparagus is to lightly
steam it, then toss it with gremolata (or gremolada), a
lively mixture of parsley, lemon zest and garlic.

1 lb fresh medium asparagus spears, trimmed
1 Tbsp salt-free all-purpose seasoning

Gremolata
1/4 cup finely snipped fresh parsley
1 Tbsp snipped fresh dillweed
1 tsp grated lemon zest
1 medium garlic clove, minced

Yogurt Dip - 4g Carbs, <1g Fiber

Preparation time: 15 minutes

3 cloves garlic, crushed (or 1 Tbsp bottled garlic)
1/4 tsp salt
2 tsp vinegar
8 oz plain nonfat yogurt
1 small cucumber (about 5–6 inches long)
1 tsp olive oil

Place the garlic in a bowl and stir in salt and vinegar, mixing
well. Drain any liquid off the yogurt, then stir yogurt into the
garlic mixture. Peel the cucumber, slice in half lengthwise, and
remove the seeds. Finely dice the cucumber and stir into the
yogurt mixture. Stir in oil. Refrigerate 2 hours to allow flavors
