BBQ Chicken and Cheddar Foil Packet Dinner
This simple-to-make meal is a nice change from the usual camping or
grill food.

Suggestions: For camping or outdoor grill, pre-heat charcoal or grill
and place packets on grill. Cook until chicken is cooked through.

3 Tbsp barbecue sauce
4 small boneless, skinless chicken breast halves (about 1 lb)

From: Mix ‘n Match Meals in Minutes for People with Diabetes

1/4 peeled onion OR 2 Tbsp frozen chopped onion
1 medium tomato, quartered (about 3/4 cup)
1/2 ripe avocado, peeled and seed removed (about 1/2 cup)
1/2 Tbsp lemon or lime juice
Several drops hot pepper sauce
Salt and freshly ground black pepper to taste
2 (8-inch) flour tortilla
2 Tbsp pine nuts
6 oz roasted boneless skinless chicken breast,
cut into strips about 2 inches long and 1/4-inch wide,
or roasted ready-to-eat chicken strips (1-1/2 cups)

BROCCOLI WITH CREAMY LEMON SAUCE

I just received this recipe in a newsletter. It sounded so good (yes, even
at 6:30 AM !!). I have been looking for sauces for veges.

I decided to share it, even though I don’t have the nutritional break down.

I had to Google the word "flex points". Turns out to be a Weight Watchers
term, It led me to a points meter for sale on E Bay.

Anyway, here is the recipe, and I would appreciate anyone who knows how to
calculate carbs, to let me know the carbs in this recipe. TY—–Cece

Lentil Soup With Spinach and Turnips - 24g Carbs, 9g Fiber

2 medium ribs celery
1/4 cup extra-virgin olive oil
2 large garlic cloves, minced or pressed
2 medium turnips (about 12 ounces), peeled and finely diced
2 cups lentils, picked over and rinsed
1 bay leaf
10 cups water
1 tablespoon cumin seeds
1 tablespoon coriander seeds (ground coriander can be substituted)
10 ounces fresh spinach or frozen leaf spinach, thawed and drained
1 tablespoon salt or to taste
coarsely ground black pepper to taste
3 lemons, quartered, or sumac powder

1 1/2 cups sugar snap peas, about 12 oz
8 oz Dreamfields Penne Rigate (3 cups uncooked)
1 Tbsp olive oil
2 cloves garlic, minced
1/4 tsp salt
1/4 tsp ground black pepper
12 oz fresh shrimp, peeled and deveined
1/4 cup white cooking wine
1/2 cup whipping cream
1 Tbsp lemon juice

Velveeta Light Chicken Florentine

Total Time: 17 min
Makes: 4 servings

2 Tbsp. KRAFT Light House Italian Reduced Fat Dressing
4 boneless skinless chicken breast halves (1-1/4 lb.)
1 pkg. (10 oz.) frozen chopped spinach, cooked, well drained
1/4 lb. (4 oz.) VELVEETA LIGHT Reduced Fat Cheese Product, cut up
2 tsp. fat free milk

PREHEAT broiler. Brush dressing evenly onto chicken breasts; place on
broiler pan sprayed with cooking spray.

BROIL 10 to 12 minutes or until chicken is cooked through, turning

BERRY PUDDING - Diabetic

BERRY PUDDING

3 c. fresh or frozen unsweetened berries
3 tbsp. cornstarch
1/8 tsp. salt
1/8 tsp. cinnamon
1 c. water
1/2 tsp. vanilla or almond extract
Sugar substitute to equal 1 c. sugar

Combine 1 cup berries, cornstarch, salt, cinnamon, and water in saucepan. Cook
over medium heat until mixture thickens, stirring constantly. Add vanilla or
almond extract, remaining 2 cups berries, and sugar substitute; mix well. Cool
and serve. 6 servings. Amount 1/2 cup. Exchange: 1 fruit.
