Mint-Pesto Rubbed Leg of Lamb - 1g Carbs

Have your butcher "butterfly" a boneless leg of lamb (that is,
open it up to a large, flat cut of meat); ask that any visible
fat be trimmed off. The pesto rub is also a terrific dip for
fresh vegetables or a sauce for steamed vegetables.
Makes about 12 servings
ACTIVE TIME: 30 minutes

Asparagus with No-Cook Creamy Mustard Sauce - 8g Carbs, 2g Fiber

This recipe will complement any meal.

1/2 cup plain nonfat yogurt
2 Tbsp light mayonnaise
1 Tbsp Dijon mustard
2 tsp lemon juice
1/2 tsp salt
2 cups water
1 1/2 lb asparagus spears, rinsed and trimmed
Black pepper to taste

1. For sauce, combine in a bowl yogurt, mayonnaise, mustard,
lemon juice and salt. Whisk until smooth and set aside.

2 tsp crushed garlic
1 medium onion, diced
2 celery stalks, diced
2 carrots, diced
2 cups sliced mushrooms
3 1/2 cups beef stock **Note

2 small potatoes, peeled and diced
4 oz stewing beef, diced
2 Tbsp chopped fresh parsley

Shrimp Caesar Salad - 33g Carbs, 2g Fiber, 4g Sugar

From: Mix ‘n Match Meals in Minutes

2 whole-wheat pita breads
4 cups washed ready-to-eat Romaine lettuce
6 oz peeled cooked medium shrimp
2 Tbsp Caesar salad dressing
2 Tbsp grated Parmesan cheese
Freshly ground black pepper to taste

Preheat oven or toaster oven to 300 degrees F.

Place lettuce and shrimp in a bowl and toss
with dressing. Place pita bread in oven.

Creamy Cauliflower & Roasted Garlic Soup - 15g Carbs, 2g Fiber

You can prepare the roasted garlic up to 1 day before you
cook this soup.

1 medium head garlic, cloves unpeeled but papery outer skin removed
1/2 tsp plus 2 tsp extra virgin olive oil
2 medium leeks (about 1 1/3 cups), white part only, washed and sliced
1/2 -1 tsp dried thyme
Salt, to taste
1/4 tsp white pepper
1 lb (about 3 1/2 cups) coarsely chopped fresh cauliflower
3 cups lowfat, reduced sodium chicken broth
1 can (12 oz) fat-free evaporated milk
4 Tbsp freshly grated
Parmesan cheese

1 1/2 lb cubed stewing beef, cut into smaller pieces if large
Salt and pepper to taste
1/4 cup flour
3 Tbsp vegetable oil
1 medium onion, halved and thinly sliced
1 medium green pepper, cut into 1/2" cubes
2 garlic cloves, crushed
3/4 cup lager beer
14 tin diced tomatoes
1 Tbsp tomato paste
1 bay leaf
1 tsp ground cumin
2 chipotle peppers, finely chopped
1/2 tsp sugar
1 cup frozen corn kernels

Chilled Mango Soup with Crab - 21.4g Carbs, 2.2g Fiber

2 medium ripe mangoes, peeled and cut into chunks
1 14 oz can coconut milk
1 tsp curry powder
2 Tbsp freshly squeezed lime juice
Salt and white pepper to taste
1 7oz can crabmeat, drained well
Cilantro or tarragon sprigs for garnish

Place the mango, coconut milk, curry powder, lime juice,
salt and pepper in a food processor and pulse until smooth.
Chill soup in the fridge for at least 2 hours. Pour into
well-chilled soup bowls; decorate the top of the soup
with the crabmeat, garnish with cilantro or tarragon
sprigs and serve.

Need Easy, Fast Diabetic Recipes

I was diagnosed with Type 2 diabetes a few weeks ago, after a bout
of acute pancreatitis followed by gallbladder surgery. I already have
multiple sclerosis, fibromyalgia and GERD, among other things. My time
and energy are very limited. So cooking a lot of meals from scratch is
a major stressor for me. Can anyone suggest some diabetic-friendly
pre-packaged or frozen foods, and/or quick and tasty recipes that can
be made from such ingredients? Thanks in advance for any help you can
offer.
