Chicken with Sherry-Cream Sauce - 5g Carbs, 0g Fiber

4 boneless, skinless chicken breasts
Salt to taste
Freshly ground black pepper
2 tsp olive oil
1/2 cup chopped shallots
3 Tbsp sherry
3/4 cup low-sodium chicken broth
2 Tbsp nonfat sour cream
1. Using a mallet, flatten the chicken breasts slightly.
Season them with salt and pepper.
2. Heat the oil in a large nonstick skillet over medium-high
heat. Add the chicken breasts and cook until the chicken is
golden brown, about 4 minutes on each side. Transfer the
chicken to a platter and keep warm.
3. Add the shallots and sherry and cook until the sherry has
almost completely evaporated. Add the chicken broth and cook
until it has reduced by half.
4. Whisk in the sour cream, pour the sauce over the chicken
and serve.
