Need Easy, Fast Diabetic Recipes

I was diagnosed with Type 2 diabetes a few weeks ago, after a bout
of acute pancreatitis followed by gallbladder surgery. I already have
multiple sclerosis, fibromyalgia and GERD, among other things. My time
and energy are very limited. So cooking a lot of meals from scratch is
a major stressor for me. Can anyone suggest some diabetic-friendly
pre-packaged or frozen foods, and/or quick and tasty recipes that can
be made from such ingredients? Thanks in advance for any help you can
offer.

    Laura,

    Sorry to hear you have so many problems… I know it is very
    limiting… not to mention frustrating!

    Do you have anyone who can help you out… even occasionally? If so,
    then maybe they can help you by cooking meals in larger batches and
    freezing for reheating later. Also, if you are able yourself or if
    someone can assist you in buying what meats you need… then cutting,
    packing, labeling and freezing in portion sizes for easy use later. We
    do this all the time. It is a big help later when in need of a meal
    but limited on time or stamina. I do this with chicken and fish but
    wrapping indiviually in plastic wrap and then freezing in labeled zip
    bags.


    Other than that…
    Try keeping such things such as as frozen boneless skinless chicken
    breasts on hand… they can be thawed, spiced in numerous ways and
    cooked so many ways. Sometimes when I forget to take frozen meats out
    in advance like the chicken or fish… I poach the chicken in seasoned
    broth or seasoned water. This would works well for fish also. Or, I
    might start it this way and when thawed I drain the liquid and put a
    bit of olive oil to finish it.

    There is an abundance of healthy frozen veggies available… now sold
    as single veggie or mixtures that can be cooked endless ways… even
    for a stir fry… adding chicken, shrimp or whatever lean meat you
    wish. A good non-stick pot/skillet is a treasure for cooking this way.
    I put my frozen veggies (I put them in while frozen) in my Analon pan
    with a bit of olive oil… seasoning of choice… and cook over medium
    heat until done as desired.

    I am not sure if you can eat frozen store bought dinners but check out
    the South Beach Diet brand… maybe this might do in a pinch.

    If you want to seach the previous posts on this group for recipe
    ideas… do a search at the top of the "messages" page for "Brand-Name
    Diabetic Meals In Minutes" This will list all previous posts from this
    book and maybe some of these will be easy enough for you.

    Keeping peanut butter on hand is another quick idea. Just put on your
    favorite low carb or whole grain/high fiber bread. This is good for
    anytime of day, easy to carry if you go somewhere and great for a
    before bedtime snack. I like the brand "Fifty50" for my peanut butter.
    It tastes like plain roasted peanuts with no added sugar… Plus —
    this company gives half of their profits to diabetes research.
    Locally, I find it in the specialty section where they keep lots of
    "diet" foods. If your local store does not carry this brand it is sold
    online at www.amazon.com

    I do hope this gives you some ideas to help…
