Peanut Butter Bread Pudding

1/4 cup Peter Pan® reduced-fat peanut butter
8 slices day old reduced-calorie bread
1 (4-serving) package JELL-O® sugar-free vanilla cook and serve pudding mix
2 cups skim milk
1 teaspoon vanilla extract

Preheat oven to 375 degrees. Spray an 8X8 inch baking dish with butter-flavored
cooking spray.

Evenly spread peanut butter on bread. Fold each piece of bread in half and break
into pieces.

In a large bowl, combine dry pudding mix, skim milk, and vanilla extract. Mix

1/4 cup diced red bell pepper
3 tablespoons finely minced fresh parsley

Orecchiette-Spinach Soup

1 cup water
3 14 oz. cans low-salt fat-free chicken broth
1 1/2 cups orecchiette or gnocchi pasta shells
1 10 oz. package frozen spinach, thawed
1 cup chopped, seeded tomato
3 tablespoons parmesan cheese
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
1 egg
6 teaspoons parmesan cheese

Peeling Tomatoes: Cut out the stem; plop tomatoes into boiling water for about 1
minute; remove from water with a slotted spoon and immediately drop into a bowl

Herb and Garlic Fish - 1g carbs

Herb and Garlic Fish

1/2 cup mayonnaise
1/2 teaspoon dried marjoram leaves
1/2 teaspoon dried thyme leaves
1/2 teaspoon garlic powder
1/4 teaspoon ground celery seed
1 pound fish fillets

Mix dressing and seasonings.
Place fish on greased grill over medium coals or rack of broiler pan 2 to 4
inches from heat. Brush with 1/2 of the dressing mixture. Grill or broil 5 to 8
minutes. Turn; brush with remaining dressing mixture. Continue grilling or
broiling 5 to 8 minutes or until fish flakes easily with fork.
Makes 4 servings.

Mojo Verde

This green, herb-flavored sauce is good on almost anything.

2 tbsps. cider vinegar or wine vinegar
2 tbsps. extra-virgin olive oil
6 cloves garlic, crushed and peeled
1/2 cup lightly packed fresh cilantro leaves, washed and dried
1/2 cup lightly packed fresh parsley leaves, washed and dried
2 cups diced green bell peppers (1 1/2 medium pepper)
2 tsps. sliced almonds, toasted
3 slices French bread, 1/2-inch thick, lightly toasted and cubed
1 fresh green serrano or jalapeno pepper, seeded and coarsely chopped
1/2 tsp. salt, or to taste
