This dish tastes like it took you all day, but it can be

1 medium onion, chopped (1/2 cup)
1 Tbsp cooking oil

Intro-and question

Anyway I have a Superbowl party I need to bring a dish to, a main dish to
feed at least 10 people. I say main dish because I was told to bring
whatever I can eat. Everyone knows me as the "mom" of our group since I
coordinate our meetings and dinners so everyone looks forward to whatever I
bring.

Do any of you know a good casserole type main dish that I can bring that is
low carb? I’ve been agonizing over this for a couple weeks now trying to
find a recipe that is easy, and inexpensive, since it will be for 10+
people. Soup is out since the people hosting the party will be having a
couple selections of that (all carb would it figure).

Boy I never knew how carbs play such a big a part of our diets especially if
you’re looking for inexpensive cooking ideas.. Sigh… I’m still struggling
with this as you can see.

This vegetarian curry is easiest to make if you use
packaged, fried panir, which is an unripened Indian
cheese. The recipe was provided by cookbook author
Raghavan Iyer and is to appear in his next book,
planned for publication this year. Serve with rice
or, as Iyer does, with slices of toasted French
bread to dunk into the creamy, sweet-tart sauce.

Easy Chicken Tikka - 4g Carbs, 0g Fiber

This is author Mohica Bhide’s go-to Monday night recipe,
needing just a half-hour’s marinating time. "It’s what
I do when I don’t feel like making anything else, because
it’s so easy," she says. Serve with rice, a green salad
and Deep Tandoori Roti, a brand of Indian bread. The
chicken also can be threaded onto metal skewers and
grilled over indirect heat for 8 to 10 minutes.

3/4 cup plain yogurt
1 Tbsp ginger-garlic paste, such as Nirav brand
1 Tbsp chicken tikka masala, such as Shan brand
