Ratatouille Pizza - 16g Carbs, 2.4g Dietary Fiber

Gather the kids and make this yummy pizza together.

1 Tbsp cornmeal
1/2 small onion, chopped
1 small eggplant, peeled and cut into small chunks
1 small zucchini, cut into small chunks
2 cloves garlic, chopped
2 plum tomatoes, chopped
1/4 cup chopped fresh basil
1 tsp drained capers
1/4 tsp salt
1 tube (10 oz) refrigerated pizza dough
1 1/4 cups (5 oz) shredded low-fat mozzarella cheese
1/4 cup (1 oz) grated Parmesan cheese

Preheat the oven to 450F. Coat a large round pizza pan with
cooking spray. Sprinkle with the cornmeal.

Coat a medium nonstick skillet with cooking spray and set
over medium heat. Add the onion, eggplant, zucchini, and
garlic. Cook, stirring occasionally, for 5 to 7 minutes,
or until soft. Add the tomatoes, basil, capers, and salt.
Cook for 3 minutes, or until the tomatoes are soft. Remove
from the heat to cool slightly.

Turn the dough out onto a lightly floured work surface.
Roll into a 12" circle and place on the prepared pan.
Spread evenly with the ratatouille. Top with the
mozzarella and Parmesan. Bake for 10 to 12 minutes,
or until the crust is golden brown.
