1 clove garlic, minced
1 Tbsp oregano, fresh

Pesto Flavored Squash Saute - 8g Carbs, 2g Fiber, 5g Sugar

1 Tbsp pine nuts
1 Tbsp olive oil
1 cup chopped onion
2 cloves garlic, minced
1 medium zucchini, thinly sliced
1 medium yellow squash, thinly sliced
1/4 cup packed basil leaves, minced
1 Tbsp freshly grated Parmesan cheese
Pinch of freshly ground pepper

Toast the pine nuts in a small skillet over medium heat
for 3 to 5 minutes, until lightly brown and fragrant.

1 Tbsp finely chopped shallots
2 Tbsp red wine vinegar
1/3 cup olive oil
1/4 cup pine nuts
