Menus

Hi everyone,
My name is Dee and I just joined last night. I’m a type 2 diabetic and
have a hard time planning meals. I was wondering if anyone has any
menus/meal planning samples that they have made themselves or even
gotten from another source. I realize that all will not be
specifically made for me but I can change them so that they work for
me.
I’m newly widowed and so of course my income has been cut by about
3/4ths. I don’t use alcohol in my cooking(don’t keep it in the house)
and can’t afford fancy cuts of meats or expensive fish (like salmon).
I just need some simple everyday meal planning guides. I’m all out of
ideas.

Hi, I purchased a product from TV called a Magic Bullet. It has a nice
instruction/cook book and I got the chance to watch them demonstrate it again on
T.

The give a basic muffin recipe as follows.
1 egg
1/2 cup milk
1 tablesppon veg oil
1 1/4 cup Bisquick (or any baking mix)
1/4 cup sugar.

Now I thought I could adapt this by using an alternative sweetener and I asked
what Bisquick was and learned it is a prepared mix. So I thought I could just
use 1/4 cups of flour and I used 1/4 Soy flour 1/4 Rice Flour (which I find a
bit heavy) and 3/4 S.R. Flour (all purpose flour).

Spicy Chicken and Star Fruit for 6 - 35g Carbs, 2g Fiber

3 Tbsp balsamic vinegar or red wine vinegar
4 tsp olive oil
3/4 tsp dried rosemary, crushed
1/2 tsp ground cumin
1/4 tsp ground coriander
1/8 tsp black pepper
1/8 tsp ground red pepper
3 star fruit (carambola), sliced
12 green onions, cut into 2-inch pieces, and/or
4 small purple boiling onions, cut into wedges
6 medium skinless, boneless chicken breast halves

From the Indian Foods Collection at Better Homes and Gardens
Makes 4 servings
Prep: 20 minutes
Chill: 1 hour

1 cup seeded watermelon chunks
1 cup seeded peeled papaya chunks
1 cup pineapple chunks
1 cup peeled mango chunks
2 Tbsp lime juice
1/8 to 1/4 tsp freshly ground black pepper
1/8 tsp ground cardamom

1. Combine all ingredients in a serving bowl. Cover and chill
at least 1 hour or up to 24 hours.

Makes 4 or 5 servings
Prep: 20 minutes
Cook: 7 to 9 hours (low), 3-1/2 to 4-1/2 hours (high)

4 cups coarsely chopped cabbage
3 cups peeled, cubed potato
1-1/2 cups sliced carrots
1 lb cooked kielbasa, sliced
1/2 tsp dried basil, crushed
1/2 tsp dried thyme, crushed
1/2 tsp ground black pepper
2 14-oz cans reduced-sodium chicken broth

Low Carb Indian - Creamed Spinach with Garam Masala - 10.6 g carbs

I found this recipe. You could substitute milk or a combination of
milk and low fat yogurt for the whipping cream.

Creamed Spinach with Garam Masala
Serves 8

This is excellent served with lamb as well as turkey. Garam masala
is an East Indian blend of sweet spices, such as cinnamon, nutmeg
and allspice. It is usually added at the last minute to cooked foods
for an extra boost of flavor.

Low Fat Curried Fish Kebabs - 7g Carbs, 7g Fiber

Enjoy these low-fat curried fish kebabs with whole grain rice, or
a fresh green salad with a light citrus dressing.

1 8-oz carton plain nonfat or low fat yogurt, drained
1 tsp crushed garlic
2 Tbsp curry powder
1 Tbsp lemon juice
20-oz firm white fish such as cod or halibut cut into chunks
1 tsp paprika

Blend drained yogurt with crushed garlic, curry powder and lemon
juice. Place chunks of fish in a large glass baking dish and pour
curried yogurt mixture over them. Stir to cover the fish pieces.
