New Potato and Green Bean Salad - 14g Carbs, 2g Dietary Fiber

Makes: 6 cups (8 Servings)
From: The New Family Cookbook for People with Diabetes

1 lb new, small, red or Yukon Gold potatoes, peeled
8 oz fresh green or wax beans, ends trimmed,
cut into 1-inch pieces (about 2 cups)
1/4 cup olive oil
2 Tbsp Dijon mustard or grainy mustard
2 Tbsp cider vinegar
2 Tbsp chopped fresh chives,
or chopped green onion tops
2 Tbsp crumbled Roquefort or blue cheese (optional)

Cook the potatoes in a large pot of boiling water for

Julia child spice blend

Ingredients
1 teaspoon ground bay leaves
1 teaspoon clove
1 teaspoon mace
1 teaspoon nutmeg
1 teaspoon paprika
1 teaspoon thyme
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon savory
2 teaspoons freshly ground white pepper

Instructions
Mix well in a bowl and store in a screwtop glass jar. Use with any type
of meat or poultry.

"baby bam"" spice mix

Emeril is known for his spicy Cajun dishes. This spice mix is much
tamer than the usual, so it will appeal to kids and those who cannot
handle the fire of most Cajun seasonings.
INGREDIENTS:
3 tablespoons paprika
2 tablespoons salt
2 tablespoons dried parsley
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon celery salt

Diabetic Friendly Vegetarian Pizza - 16g Carbs, 3g Fiber

This recipe yields 2 x 12" thin crust pizzas with 8 slices each.

Dough:
2 cups whole wheat or spelt flour
1 pkg (7g) active dry yeast
1 Tbsp olive oil
1 Tbsp white sugar
3/4 tsp salt
1/2 to 3/4 cup hot water

Toppings:
400g firm mozzarella cheese (partly skim milk/low fat)
1 cup chopped/diced red bell pepper
1 cup chopped/diced green bell pepper
3 diced onions medium

1/2 cup shortening
3 Tbsp granulated brown sugar replacement
1 egg
1 1/2 cup flour (sifted)
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp nutmeg
1/4 tsp ground cloves
1/3 cup skim milk
1/3 cup raisins, chopped

COCONUT COOKIES - diabetic

COCONUT COOKIES

1/2 cup margarine
2 tablespoons granulated brown sugar replacement
1 egg
1/4 cup water
1 teaspoon vanilla
1 1/2 cups sifted flour
3/4 cup grated unsweetened coconut

Cream together margarine and brown sugar replacement.
Beat in egg, water, and vanilla until fluffy.
Add flour, beating until smooth.
Fold in coconut.
Drop by teaspoonfuls onto lightly greased cookie sheet.

Sugar Pecan Crisps -

Makes 3 to 4 dozen

3/4 cup butter, room temperature
2/3 cup sugar
1 egg
1 teaspoon vanilla
1/4 teaspoon salt
1 3/4 cups flour
1/2 cup pecans, finely chopped

In a medium bowl, cream butter with sugar until light and fluffy. Add eggs,
vanilla, and salt. Beat well. With mixer at low speed, gradually add flour.

Muffin, Magic Bullet and Bisquick

I am familiar with Bisquick and Magic Bullets too. Bisquik is a commercially
made mixture for making biscuits, muffins, and pancakes. Here’s a version you
can make at home. I don’t have the carb count, as I haven’t adapted it yet for
diabetic cooking.

Black’s Biscuit Mix

There is a well known Commercial biscuit mix called Bisquick, but this version
you can make for yourself, and save some money. It’s also got some whole wheat
flour in it, which makes it more nutritious than the all white commercial
variety.
