COCONUT COOKIES - diabetic

COCONUT COOKIES

1/2 cup margarine
2 tablespoons granulated brown sugar replacement
1 egg
1/4 cup water
1 teaspoon vanilla
1 1/2 cups sifted flour
3/4 cup grated unsweetened coconut

Cream together margarine and brown sugar replacement.
Beat in egg, water, and vanilla until fluffy.
Add flour, beating until smooth.
Fold in coconut.
Drop by teaspoonfuls onto lightly greased cookie sheet.

Bake at 375 for 10 to 12 minutes.

Yield: 42 cookies

Exchange 1 cookie:…1/3 fruit, 1/2 fat
