Here’s a new way to do turkey on Thanksgiving that you’ll all enjoy!

2 turkey breast tenderloins (8-12 oz each)
1/4 cup fat-free ricotta cheese
2 Tbsp fat-free cream cheese
2 Tbsp diced red bell peppers
1 Tbsp grated Parmesan cheese
1 Tbsp chopped fresh oregano
1 Tbsp drained capers
Salt and ground black pepper
1 cup fat-free chicken broth
2 Tbsp fat-free sour cream
2 tsp lemon juice

I have made this many times and it is a good way to feed a
craving for chocolate with mimimum guilt!!

It’s a rare person that does not like chocolate cake. This is a
flourless version that looks somewhat flat after baking, but the
taste if far from it! Almonds and bittersweet chocolate provide
a rich, decadent taste in every bite.

2 Tbsp trans-free margarine or unsalted butter
1 Tbsp unsweetened cocoa powder
1/2 cup blanched almonds

Spain-Basque-Style Chicken

2 tbsps. all-purpose flour
1 tbsp. chopped fresh thyme or 1 tsp. dried thyme
1 tsp. paprika
1/2 tsp. freshly ground pepper
1/2 tsp. salt
4 skinless chicken breast halves
2 tsps. olive oil
1 large onion, coarsely chopped
2 cloves garlic, minced
1 cup dry white wine
1 bay leaf
1 tbsp. chopped roasted red bell pepper or chopped, drained pimiento
2 tbsps. chopped fresh parsley

Fiesta Stuffed Cabbage

1 head savoy cabbage, cored
1/2 cup quick-cooking barley
2 tsps. olive oil
3/4 lb. ground lean skinless turkey breast
1 small onion, chopped
1 garlic clove, minced
1 1/4 oz. package reduced-sodium taco seasoning mix
1 cup fat-free salsa

Place cabbage in large pot and cover with enough water to fill pot half full.
Bring to a boil; reduce heat and cook until outer leaves are pliable, about 5
minutes. Loosen and remove 12 leaves; transfer to large bowl. Reserve remaining
cabbage for another use.

Chilled Tomato and Shrimp Soup

3 large ripe tomatoes, coarsely chopped
2 cups reduced-sodium chicken broth
1 large onion, coarsely chopped
2 tbsps. tomato paste
2 garlic cloves, coarsely chopped
1/2 tsp. salt
1/4 tsp. freshly ground pepper
1 cup fat-free buttermilk
1 lb. frozen cooked shrimp, thawed and cut into chunks
1/2 seedless cucumber, diced
1/4 cup chopped fresh dill
1/4 cup minced fresh chives

16 Bean Soup

Most large markets carry a bean mixture in their dried bean section. The one I
found had 16 varieties. This is a meatless soup, but very filling. It could be
made vegetarian by leaving out the chicken bouillon.

1 lb Dried Bean Mixture
1 Onion,Chopped
1/2 c Celery,Sliced
1 Carrot,Sliced
1 T Low Sodium Chicken Bouillon
1 cn Low Sodium Tomatoes
1/2 t Black Pepper
6 c Water

Diabetic Lime Chiffon Pie - Thanksgiving

Diabetic Lime Chiffon Pie

1 cooked pie shell
4 eggs yolks, beaten
1 tablespoon Sweet and Low
1/2 teaspoon salt
3 tablespoons lime juice ( for Lemon Chiffon use lemon juice)
1 tablespoon lemon rind
1 tablespoon unflavored gelatin
1/4 cup cold water
4 egg whites

Put pie crust in to pan cook. Combine yolks, sweetener, salt, lime juice,
and lemon rind in top of double boiler. Cook and beat with beater until
thick. Soften gelatin in cold water dissolve in hot mixture: cool. Beat egg
