Curried Peanut Soup - 9g Carbs, 1g Fiber, 4g Sugar

Yield: 1 (1 cup) serving

2 Tbsp fat-free sour cream
1 Tbsp natural peanut butter, at room temperature
1/2 tsp mild curry powder, or to taste
1 cup reduced-sodium chicken broth

In a small bowl, whisk together the sour cream,
peanut butter, and curry powder until smooth.
Gradually whisk in the chicken broth until well combined.
Microwave 1 minute. Pour into a mug.
