Oct: Cabbage and Apples - Nutrition not shown

Cabbage is in season in October. Either red or green
may be used.

Cabbage and apples

Preparation time: 15 minutes
Cooking time: 5 minutes
Serves: 4

1 head cabbage, shredded finely
1 large green apple, peeled, cored and sliced finely
1/2 cup apple juice
1 teaspoon fennel seeds

1. Place all ingredients into a saucepan, cover tightly and

cook for 10 minutes.

2. Serve hot or allow to cool and use as a salad vegetable.

Notes:
Cooked with apples, the sweet flavor and color of fresh cabbage
is enhanced. If you have one, use a food processor to shred
the cabbage finely.
