Turkey and Arugula Quesadillas - 6g Carbs

Turkey and Arugula Quesadillas

1/4 cup light sour cream
4 teaspoons lime juice, divided
1/2 teaspoon cumin
1 large bunch arugula, stems removed
4 plum tomatoes, diced
4 burrito-size flour tortillas
1 1/2 cups light Mexican-flavored shredded cheese
3/4 pound deli-sliced smoked turkey

Preheat oven to 300 degrees. Coat a baking sheet with cooking spray.
Combine the sour cream, 2 teaspoons of lime juice and the cumin in a small bowl.
In another bowl, combine the arugula, tomatoes and remaining 2 teaspoons of lime
juice and toss thoroughly.

Crunchy Fish Nuggets With Lemon Tartar Sauce

1 pound skinless halibut fillets or other white fish fillets
Egg substitute equivalent to 1 egg
2 tablespoons skim milk
1/4 cup grated Parmesan cheese
1/4 cup cornflake crumbs or plain dry bread crumb
1/2 teaspoon paprika
1/2 cup fat-free, cholesterol-free mayonnaise
2 tablespoons finely chopped dill pickle
1 teaspoon finely shredded lemon peel
1 teaspoon lemon juice

Preheat oven to 450 degrees.
Rinse fish and pat dry. Cut fish into 24 bite-size pieces. Set aside.

1 large green apple, peeled, cored and sliced finely

Cauliflower-Mushroom Bake Recipe

3 cups cauliflower florets
1 cup mushrooms, chopped
1/2 cup red onion, chopped
1 tablespoon olive oil
2 teaspoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
4 medium green onions, chopped

Heat oven to 350 degrees. Spray rectangular baking pan (13×9x2 inches) with
nonstick cooking spray. Mix all ingredients except onion and spread evenly into
baking dish. Bake uncovered 40-45 minutes or until vegetables are tender,
stirring occasionally. Sprinkle with green onions.

Baked Potato Casserole Recipe

9 medium potatoes, scrubbed but not peeled
4 large cloves garlic, unpeeled
1 1/2 cups low fat cottage cheese
1/2 cup light sour cream
1 1/2 teaspoon salt
1/2 teaspoon black pepper
1 bunch scallions, trimmed and sliced
1/2 cup grated sharp cheddar cheese
1/4 teaspoon paprika

Place potatoes and garlic in a large saucepan and cover with cold water. Bring
to a slow boil over medium heat. Reduce the heat to low and cook until the
potatoes are barely tender, about 15 to 20 minutes. Drain and let sit until cool
enough to handle. Peel the potatoes and grate them into a large bowl; set aside.

GRILLED PORTOBELLO MUSHROOM SANDWICH

I like to put broccoli with this..

INGREDIENTS

- 1 portobello mushroom
- 1/2 toasted English muffin or other bread
- Pinch salt
- Pinch black pepper
- Desired vegetables (optional)

DIRECTIONS

Preheat the broiler. Place the mushroom and any vegetables
you wish to grill on a small baking sheet. Broil 2 inches from
the heat about 3 minutes on each side or until the mushroom

Chicken and Broccoli in Mushroom Sauce

This one is very good.. I love Chicken and Mushrooms just add The broccoli
and Im good..

Ingredients
Vegetable oil spray
10 ounces fresh broccoli spears (or 10-ounce package frozen)
2 cups diced, cooked chicken
For Sauce:
1 teaspoon light margarine
8 ounces fresh mushrooms, sliced (2-1/2 to 3 cups)
1-1/3 cups Chicken Broth
5-ounce can fat-free evaporated milk (2/3 cup)
1/4 cup all-purpose flour
1/4 cup sliced green onions

DIABETIC DATE DAINTIES

2 eggs
1 1/2 tsp. liquid sweetener
1 1/2 tsp. baking powder
1/3 c. dates, chopped
1/4 c. flour
1/2 c. nuts
1 1/2 c. bread crumbs

Beat eggs, sweetener and baking powder. Add dates, flour and nuts. Stir in bread
crumbs. Chill, then measure by teaspoon on a greased cookie sheet. Bake at 375
degrees for 12 minutes.

Jamaican Rubbed Chops
