Basic Meatloaf - 26g Carbs, 1g Fiber

Nonstick cooking spray
1 egg
1/2 cup grated onion
1 cup bread crumbs
1 3/4 lb lean ground beef sirloin
1 cup low-sodium ketchup
1/4 cup chopped fresh parsley
1/4 cup diced green bell pepper
Salt to taste
Freshly ground black pepper

1/2 cup water

1. Spray a baking pan with nonstick spray and preheat the oven to
350 degrees F.

2. In a large mixing bowl, thoroughly combine the egg, onion and
bread crumbs. Add the ground beef, 1/2 cup of ketchup, green
pepper, parsley, salt and pepper and mix to combine.

3. Form the meat mixture into a loaf and place it on the prepared
pan. Spread a 1/4 cup of the remaining ketchup on top of the
meatloaf and bake until cooked through, about 45 minutes to
1 hour. Remove from the oven and let stand for 10 minutes
before serving.
