A Heart Healthy Recipe!

Prep: 25 minutes
Freeze: 6 hours

2 cups frozen strawberries or raspberries*
1 1/2 cups water
1/2 cup honey
2 Tbsp lemon juice

1. Partially thaw frozen berries by setting them out in a bowl at
room temperature just until slightly icy (about 20 minutes); do not
drain thawed berries.

Start to Finish: 15 minutes

2 cups cubed angel food cake
1 8-oz carton lemon low-fat yogurt
1/4 of an 8-oz container frozen light whipped dessert topping, thawed
1 cup mixed berries, such as red raspberries, blueberries, or sliced
strawberries
Fresh mint (optional)

1. Divide the angel food cake cubes among 4 dessert dishes. In a
small mixing bowl fold together the yogurt and whipped topping.
Dollop yogurt mixture atop cake cubes. Sprinkle with berries. If
desired, garnish with fresh mint.

Bake: 30 minutes

2 egg whites
1 tsp lemon juice
1/4 tsp cream of tartar
2/3 cup sugar
1/2 cup purchased lemon curd
1 cup fresh loganberries, blackberries, or other berries

1. Let egg whites stand at room temperature in a large mixing bowl
for 30 minutes. Meanwhile, line baking sheet with parchment paper.
Using a pencil, draw eight 2-1/4-inch circles and eight 1-3/4-inch

10 radishes
2 medium seedless cucumbers
1 fresh jalapeno pepper, seeded and sliced into rings*
2 Tbsp chopped fresh basil or sorrel
1/2 tsp sugar
1/4 tsp salt
1 Tbsp olive oil
1 Tbsp white wine vinegar

1. Set aside one whole radish for garnish. Thinly slice five of the
remaining radishes. Cut rest of radishes into halves or quarters.
