Chinese Melon Chicken Salad

COMBINE in a large bowl: and stirring well with a wire whisk - -

1/4 cup rice vinegar
2 Tbls. low-sodium soy sauce
2 Tbls. chunky peanut butter
1 Tbls. honey
3/4 tsp. Dark sesame oil

ADD: And Toss Well To Coat - -
( All 4 next ingredients are the same size:)

3 cups ( 2" by 1/4 " ) strips honeydew melon
3 cups " " Canteloupe

Cheese Short Crust (To go with Cherry Tomato, Bocconcini & Zucchini

Cheese Short Crust Makes enough for eight 4-inch double-crust pie or
one 10-inch pie 2 1/4 cups all-purpose flour 1/2 cup
grated manchego or Parmesan cheese Pinch of sugar 1 teaspoon
coarse salt 3/4 cup (1 1/2 sticks) cold unsalted butter 1 egg
yolk 1/4 to 1/2 cup ice water
1. Pulse flour, cheese, sugar, salt, and butter in a food processor until
mixture resembles coarse meal.
Add egg yolk; pulse to combine.
With processor running, drizzle in 1/4 cup water until dough just comes
together.
(If dough is still crumbly, add up to 1/4cup more water,
1 tablespoon then 20 seconds.
Wrap in plastic.
Refrigerate until cold, about 30 minutes.

Pâte Brisée (Pie Dough) Makes 1 double-crust or 2 single-crust 9- to
10-inch pies Pâte brisée is the French version of classic pie or tart
pastry. Pressing the dough into a disk rather than shaping it into a ball
allows
it to chill faster. This will also make the dough easier to roll out, and if
you freeze it, it will thaw more quickly. For step-by-step photos, see our
Piecrust 101 feature. 2 1/2 cups all-purpose flour 1
teaspoon salt 1 teaspoon sugar 1 cup (2 sticks) unsalted butter,
chilled
and cut into small pieces 1/4 to 1/2 cup ice water 1. In the
bowl of a food processor, combine flour, salt, and sugar. Add butter, and
process until the mixture resembles coarse meal, 8 to 10 seconds. 2.
With machine running, add ice water in a slow, steady stream through feed tube.
Pulse until dough holds together without being wet or sticky; be careful not

Zucchini or yellow Squash Fritters

Serves 4 1 pound zucchini(about 2 medium) or Yellow Squash
1 teaspoon salt 1
tablespoon freshly grated lemon zest(1 lemon), plus 1 lemon for garnish, cut
into 8 wedges (optional)

Fresh, chopped parsley or 1 tsp. Dried Parsley
1 medium clove garlic, minced 1/4 teaspoon freshly ground black
pepper 2 large eggs, lightly beaten 1/2 cup all-purpose flour
2 to 4 tablespoons olive oil
1. Using the large holes of a box grater, grate zucchini ( or Yellow
Squash )
into a medium bowl.
Add salt, lemon zest, chopped parsley, garlic, pepper, and eggs.
Mix well to combine.

Tomato Tart ( Pate Brisee : Pie Dough coming on next e-mail )

Tomato Tart Serves 8 1 head garlic 3 tablespoons
olive oil All-purpose flour, for dusting 1/2 recipe Pate
Brisee ( Pie Dough) coming on next e-mail
2 ounces Italian fontina cheese, grated (about 1/2 cup) 1 1/2
pounds firm but ripe tomatoes (4 medium), cored and sliced 1/4 inch thick
Coarse salt and freshly ground pepper
1. Preheat oven to 350°. Place garlic on a piece of aluminum foil. Drizzle
with 1 tablespoon oil. Wrap to enclose garlic in foil, and place on a small
baking sheet.

Bake until soft and golden brown and the tip of a knife easily pierces the
flesh, about 45 minutes.
Remove from oven; set aside.
Raise oven temperature to 450°.
When garlic is cool enough to handle, using either your hands or the dull

Asparagus and Lamb Stir-Fry

1 lb. boneless lamb or beef
2 tbsps. soy sauce, divided
1 tbsp. cornstarch, divided
1/2 cup chicken stock
1 tbsp. chili-garlic sauce
1 tsp. sugar
2 tbsps. vegetable oil, divided
4 green onions, cut diagonally
1 tsp. minced ginger
1 clove garlic, minced
1 lb. asparagus, cut in 2-inch pieces
2 tbsps. sesame seeds, toasted

Cut the lamb into thin strips. In a bowl, combine lamb, 1 tbsp. soy sauce and 2
tsps. cornstarch.

Vietnamese Sandwich

2 tbsps. vegetable oil
1 tbsp. chopped garlic
1 1/2 tsps. 5-spice powder
1/2 tsp. cayenne
1 tbsp. soy sauce
2 tsps. sugar or substitute
1/3 lb. ground pork
4 mini baguettes
1/3 lb. cooked pork butt or shoulder, thinly sliced
1/4 lb. Vietnamese pork sausage or headcheese or ham, thinly sliced
1/3 cup marinated daikon and carrots or marinated mixed Asian vegetables
1/3 english cucumber, seeded, cut into thin strips
8 sprigs fresh cilantro
1 serrano or jalapeno chile, thinly sliced on the diagonal
salt and pepper, to taste

Brunch Tomato and Cheesy Pie

1. Press a circle of pie dough into the bottom and partially up the sides of
a deep dish pie plate or Springform pan.

2. Brush with 1 slightly beaten egg white.

3. In a small skillet heat 2 TBLS. Olive oil or Canola oil
and cook 1/2 medium~chopped onion until translucent.
Remove from heat to cool slightly.

4. In a small bowl lightly beat together:
1 cup cottage cheese ~ 1/4 cup milk ~ 2 eggs
salt and pepper ~ and dried Italian Seasoning to taste.

5. Sprinkle 1/4 cup Parmesan cheese over bottom of pie dough.

Quick and Easy Tomato Pie

1. Bake a pie shell and set aside.

2. Layer 4 - 6 tomatoes on bottom of crust.

3. Layer on sliced or chopped onion
( Omit, if you don’t like onions.)

4. Sprinkle with dried Basil, salt and pepper

5. Combine 1/2 cup mayonnaise and 1-1/2 cups of shredded cheese
( A combination of cheddar and Monterey Jack, etc. )
6. Spread over onions and Bake at 350 for 30- 40 minutes
Until Golden.
