Chinese Melon Chicken Salad

COMBINE in a large bowl: and stirring well with a wire whisk - -
1/4 cup rice vinegar
2 Tbls. low-sodium soy sauce
2 Tbls. chunky peanut butter
1 Tbls. honey
3/4 tsp. Dark sesame oil
ADD: And Toss Well To Coat - -
( All 4 next ingredients are the same size:)
3 cups ( 2" by 1/4 " ) strips honeydew melon
3 cups " " Canteloupe
2 cups " " Daikon Radish
1 cup " " English Cucumber
3 Tbls. thinly sliced green onions
Place 2 cups of melon mixture on each of four plates :
Top each serving with 1/2 cup of Chicken:
( 2 cups shredded, cooked Chicken breast in all.)
Sprinkle 1 Tbls. of Cilantro over each serving:
( 1/4 cup chopped, fresh cilantro in all.)
Top each serving with 1-1/2 teas, walnuts:
(2 Tbls. chopped, toasted Walnuts in all.)
Serve Immediately
