Pecan Chicken - 18g Carbs, 2g Fiber, 2g Sugar

I am not so sure this is right… The recipe says it is 4 servings…
but it only calls for 4 oz of chicken which would be 1 oz per serving.
Another mistake perhaps? Maybe it should have been 4 4oz servings of
chicken. Still it sounds good. Take care, Gloria

Pecan Chicken - 18g Carbs, 2g Fiber, 2g Sugar

Pecans are high in fat, so this recipe only uses a small amount…
but a small amount provides big flavor!
Number of Servings: 4
Serving Size: 1 chicken breast

1 cooking spray
1 cup cornflake crumbs
1/2 cup chopped pecans

1/2 tsp garlic salt
1/2 tsp onion salt
1 egg
2 egg whites
2 Tbsp all-purpose flour
4 oz boneless, skinless chicken breasts

1. Preheat oven to 350 degrees. Coat a shallow baking pan with
cooking spray.

2. In a medium bowl, combine corn- flake crumbs, pecans, garlic
salt, and onion salt. In a separate bowl, lightly beat egg and
egg whites. Put the flour in a third bowl.

3. Dip each chicken breast in the flour, then the egg mixture,
then in the cornflake and pecan mixture. Coat each side of the
chicken breast.

4. Place chicken breasts in the baking pan. Spray chicken lightly
with cooking spray and bake 30-35 minutes or until chicken juices
run clear.
