Vegetable Washes

Do fruit and vegetable washes really work?

Rinse fruits and vegetables under cool, running tap water for at least 10
seconds. Scrub firm-skinned produce, such as apples and carrots, with a produce
brush; soak soft-skinned fruits, like strawberries and grapes, in water for
about a minute. Keep in mind that prewashed and frozen foods should also
receive a good rinsing before you use them.

Make a quick and fresh chunky salsa by preparing the ingredients in a food
processor (except the tomatoes—hand-chop them). If you like your salsa hot,
add 1 small jalapeño pepper. If you like it white hot, add another serrano.
2-3 tomatoes, chopped 1 med yellow onion, chopped 3 cloves garlic,
minced 2-3 tablespoons fresh cilantro, minced 1 serrano chile pepper
(adjust
according to taste/heat) 1 T olive oil 1 t cumin 1 squeeze of lime
Salt and pepper to taste
Instructions:

1. Stir all ingredients together. If salsa is watery, cook it down for 10 to
15 minutes over low heat.

Variation:
Pico de Gallo ("bite of the rooster"): Add an extra pepper and cubes of

Keep Your Greens Fresh Longer

Admit it. You can’t wait to plant greens. All of them. So we asked Brett
Blair, an experienced market grower, and Marita Cantwell, Ph.D., an extension
specialist in postharvest physiology at the University of California Davis, how
to keep those greens fresh longer.

Their advice? Keep them dry, cool, and in a humid environment. Drops of
water on the greens encourage the growth of microbes, which in turn encourage
browning and rotting. Cool temperatures (between 36° and 40°F) slow decay, and
humidity keeps the leaves from wilting. Cantwell advises providing the greens
with oxygen to maintain respiration—an essential plant process. Both Blair and
Cantwell agree that keeping your greens fresh for more than a week doesn’t
require fancy equipment, just a refrigerator, a plastic bag, and this simple
formula:

This flavorful blend of black pepper, oregano, and thyme is the
perfect way to spice up your kabobs!

Marinate: 30 minutes to 1 hour

Pecan Chicken - 18g Carbs, 2g Fiber, 2g Sugar

I am not so sure this is right… The recipe says it is 4 servings…
but it only calls for 4 oz of chicken which would be 1 oz per serving.
Another mistake perhaps? Maybe it should have been 4 4oz servings of
chicken. Still it sounds good. Take care, Gloria

but a small amount provides big flavor!
