Turkey and Mandarin Orange Rolls
4 10 inch flour tortillas
8 ounces reduced-fat cream cheese, softened
1 cup mandarin oranges, coarsely chopped and drained
1/4 teaspoon red pepper
1/4 cup sliced green onions
6 ounces turkey breast, thinly sliced
20 medium spinach leaves, washed and stemmed
In bowl, mix cream cheese and red pepper flakes. Spread cream cheese on
tortillas. Place turkey slices and spinach leaves on each tortilla. Top with
green onion and orange pieces. Slice each tortilla into 6 pieces and serve.
