Sunday Dinner Roast Beef - 0g Carb, 0g Fiber

This classic dish is a surefire way to bring the family together
around the dinner table. It’s also an ideal main course for holiday meals.

Makes 4 servings (half of cooked roast)

1 (3 3/4- to 4-lb) top round roast, tied with string
2 Tbsp extra-virgin olive oil
Salt and black pepper

1. Preheat oven to 275°F. Rinse roast with water and pat dry.

2. Heat oil in a large Dutch oven over high heat. Add the roast and
brown on all sides, about 10 minutes. Sprinkle with salt and pepper.
Place the Dutch oven in oven, uncovered, and cook, 55 minutes, or

until a meat thermometer inserted in the center registers 115°F.
Increase oven temperature to 500°F; cook, 10 to 15 minutes, until
thermometer registers 130°F. Total cooking time will be 65 to 85
minutes, depending on weight of roast.

3. Remove the roast from oven; transfer to a cutting board and let
rest 15 minutes before carving. Serve half of the roast. (Refrigerate
the other half and serve for lunch or dinner the next day.)
