Lemon Thyme Carrot Soup - 9g Carbs, 2g Fiber

Wild lemon thyme has a more pronounced lemon flavor than plain thyme.
Look for it at a local farmer’s market.

Carb Choices: 1
Prep: 30 minutes
Cook: 20 minutes + 5 minutes
Makes 8 side-dish servings

5 cups reduced-sodium chicken broth
4 cups carrots sliced 1/2 inch thick
3 leeks, sliced (1 cup)
1 bay leaf
3 Tbsp lemon juice
2 to 3 Tbsp snipped fresh lemon thyme or thyme, or

Spring Pea Soup

1 tsp. extra virgin olive oil
1 small sweet onion, finely chopped
1 boiling potato, peeled and cut into 1/2-inch cubes
1/2 tsp. salt
3 1/2 cups water
1 lb. frozen baby peas, thawed
salt and freshly ground black pepper, to taste
1 tbsp. low-fat sour cream (optional)
fresh mint leaves, minced (optional)

Heat oil in a large, heavy saucepan over moderate heat.
Add onions and cook, stirring occasionally, until soft, about 2 to 3 minutes.
Add potato and salt and cook, stirring, another 2 minutes.
Add water, cover and simmer until potato is tender, about 15 minutes.
Add peas and simmer, uncovered, 2 minutes.

Bean Sprouts and Cucumbers

2 cups bean sprouts
1 cup cucumber
1 tbsp. apple cider vinegar
1 tbsp. sesame oil
1 tbsp. soy sauce
1 tbsp. water
1 tbsp. toasted sesame oil
1/4 chili powder

Blanch bean sprouts in boiling water 1 minute, drain and let cool. Peel
cucumber, cut in half, seed and slice thinly. Mix with sprouts. In a small
bowl, mix vinegar, seasame oil, soy sauce and water. Toss with sprouts.
Granish with seasame seeds and a dash of chili powder. Makes 2 servings.
Calories 67, Fat 5 g, Carbs 5 g, Sodium 155 mg, Fiber 2 g.

CLAM-STUFFED CELERY

Makes: 12 Stuffed Celery Stalks

- 1 (10 oz.) can minced clams, drained, liquid reserved
- 1/2 cup part-skim ricotta cheese
- 1 garlic clove, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon minced onion
- 1/8 teaspoon red (cayenne) pepper
- 3 tablespoons snipped dill, or teaspoon dried dill weed
- 6 celery stalks, cut in half crosswise

Place all ingredients except dill and celery in a blender or a food processor
fitted with the metal blade and process until
smooth. Add clam liquid if needed to thin; stir in the dill. Stuff celery stalks
with cheese mixture.

1 small onion, chopped
1/2 cup dry sherry
1 cup each: tomato juice and water
2 packages (1 teaspoon each) chicken bouillon granules
1 teaspoon paprika
1/8 teaspoon freshly ground pepper
1 large clove garlic, minced
1-1/2 pounds boneless, skinless chicken breasts
2 tablespoons cornstarch, dissolved in 1/2 cup water

1. Mix onion, sherry, tomato juice, water, chicken bouillon granules,
paprika, pepper, and garlic in a large, heavy oven-proof skillet.2. Bake

Roasted Turkey

16 servings/Serving size: 4.5 oz

1 10 to 12 lb whole turkey
1 tsp salt
2 tsp black pepper
1 Tbsp garlic, minced
3 sprigs fresh rosemary
7 to 8 sprigs fresh thyme
3 sprigs fresh oregano
2 Tbsp olive oil

1.Preheat the oven to 400 degrees. Remove the turkey from its wrapping, and
