Lentil Soup II

To make this easy recipe you need only olive oil, lentils, beef
broth, an onion, tomato sauce, and Italian herbs. Ten minutes to
put together, forty-five minutes to simmer, and voila! Soup is
ready.

Serves 6 servings
Prep time: 10 minutes
Cook time: 45 minutes
Total time: 55 minutes

1 Tbsp olive oil
1 onion, chopped
4 cups beef broth

1 cup dry lentils, rinsed
1/4 cup tomato sauce
1 tsp Italian seasoning
salt and pepper to taste

1. In a large saucepan over medium heat, combine the oil and onions
and saute for 5 minutes, or until onions are tender. Add the broth
and bring mixture to a boil.

2. Add the lentils, sauce and seasoning. Reduce heat to low, cover
and simmer for 45 minutes, or until lentils are tender. Salt and
pepper to taste.
