Caesar Salad
Yield: 1 cup

1/2 cup light mayonnaise
1/3 cup low-fat (1%) milk
1 1/2 tsp Dijon-style mustard
1 Tbsp lemon juice
1/4 cup grated Parmesan cheese
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1 large head romaine lettuce, washed and torn into bite-sized pieces
In a medium bowl, combine all the ingredients
except the romaine; whisk until smooth and creamy.
Place the romaine in a large salad bowl and
toss with the dressing. Serve immediately.
