Homemade Sesame Crackers

Something nutritious for the cracker barrel.

Number of Servings: 50
Serving Size: 3 crackers

1 cup whole-wheat flour
1 cup all-purpose flour
1/2 tsp salt
1 1/2 tsp baking powder
1/4 cup plain low-fat yogurt
3 Tbsp sesame seeds
1 Tbsp reduced-calorie corn oil
3/4 cup ice water

Spray cookie sheet with nonstick cooking spray.

Sift together the first four ingredients. Cut in the yogurt.
Toast the sesame seeds in the oil and add to batter.
Mix in ice water. Knead lightly (20 strokes).
Roll to 1/8 inch thick. Cut with knife or cookie cutter.
Prick all over with a fork. Bake on cookie sheet at 350
degrees F for 10 minutes or until crackers are light brown.
Cool on wire rack. They will crisp as they cool.
Store in a tightly covered container.
