The BEST Turkey Chowder

1 cup finely chopped celery
1/2 cup chopped onion
2 cups (one 16-oz can) Healthy Request Chicken Broth
2/3 cup Carnation Nonfat Dry Milk Powder
1 cup ( one 8-oz can) cream-style corn
1/2 cup (one 2.5 -oz jar) sliced mushrooms, drained
1 1/2 cups (8 oz) diced cooked potatoes
1 1/2 cups (8 oz) diced cooked turkey breast
1/2 tsp ground ginger

In a large saucepan sprayed with butter-flavored cooking spray,
saute celery and onion for 10 minutes or until tender. In a medium
bowl, combine chicken broth and dry milk powder. Stir broth mixture

1 (4-serving) package Jell-O Sugar-Free Instant Chocolate Pudding Mix
2/3 cup Carnation Nonfat Dry Milk Powder
1 1/4 cups water
1 tsp vanilla extract
1 cup Cool Whip Lite
1 cup raisins
1 Tbsp (1/4 oz) mini chocolate chips
2 Tbsp (1/2 oz) chopped pecans
1 (6 oz) Keebler Chocolate Flavored Piecrust
1 tsp coconut extract
2 Tbsp flaked coconut

In a large bowl, combine dry pudding mix and dry milk powder.

Faux Tiramisu Cheesecake

(Dessert Every Night)

2 (8-oz) packages Philadelphia fat-free cream cheese
1 (4-serving) package JELL-O sugar-free instant vanilla pudding mix
2/3 cup Carnation Nonfat Dry Milk Powder
1 cup cold coffee
1 tsp brandy extract
3/4 cup Cool Whip Lite*
1 (6-oz) Keebler chocolate piecrust
2 Tbsp (1/2 oz) mini chocolate chips

In a large bowl, stir cream cheese with a spoon until soft. Add dry
pudding mix, dry milk powder, and coffee. Mix well using a wire
whisk.
Blend in brandy extract, and 1/4 cup Cool Whip Lite. Spread mixture

Cheese and Basil Scones

Yield: 12 scones (12 servings)

2 cups plus 1 Tbsp all-purpose flour
1/4 cup (1 oz) fresh grated Parmesan or Romano cheese
2 Tbsp chopped fresh basil, or 2 tsp dried basil
2 tsp baking powder
1/2 tesp baking soda
1/4 tesp freshly ground pepper
2/3 cup low-fat (1 percent) buttermilk
3 Tbsp extra virgin olive oil
1 Tbsp beaten egg, or 1 Tbsp egg substitutes

Preheat the oven to 450 degrees F. Spray a cookie sheet with a

amount of nonstick pan spray.

Apricot Almond Bars with Chocolate

Italian Seafood Stew

4 cloves garlic (2 smashed, 2 minced)
1 lb mussels, scrubbed and debearded, or small cherrystone clams
2 Tbsp extra-virgin olive oil, divided
1 onion, thinly sliced
8 oz squid, cleaned and cut into 1/2-inch-thick rings
1/2 cup dry white wine
1/3 cup red-wine vinegar, plus more to taste
1 (14-1/2 oz) can diced tomatoes
2 lb firm white-fleshed fish fillet, such as
monkfish or halibut, skinned and cut into 1-inch chunks
8 oz medium shrimp, peeled and deveined

Zucchini Pizzas

Whether you’re a veggie lover or learning to be one, this delicious
snack is a great alternative to greasy microwave pizzas. Next time
you sit down to watch a movie, pop these in the oven instead.

Number of Servings: 10 Serving Size: 3 slices

2 zucchini, about 2 inches in diameter, cut into 1/4-inch slices
1 Tbsp pizza sauce
1 tsp pitted black olives, sliced
1 tsp green onion minced
2 Tbsp fat-free mozzarella, grated

1. On each slice of zucchini place ingredients in order.

8 ozfresh or steamed Chinese egg noodles
1/4 cup 1/3-less-salt chicken broth
2 Tbsp reduced sodium soy sauce
2 Tbsp rice wine vinegar
1 Tbsp rice wine or dry sherry
1 tsp sugar substitute
1/2 tsp crushed red pepper
1 Tbsp vegetable oil, divided
1 clove garlic, minced
1 1/2 cups fresh pea pods, sliced diagonally
1 cup thinly sliced green or red bell pepper
1 lb boneless skinless chicken breasts, cut into 1/2-inch pieces
1 cup thinly sliced red or green cabbage

Green Beans with Almonds

1 lb frozen French-cut green beans
1 Tbsp margarine or butter
3 Tbsp sliced almonds
1/2 tsp dried dill
1/4 tsp salt

Cook the green beans according to package directions
just until tender. Drain off the excess liquid.

Place the margarine or butter in a large nonstick skillet
and melt over medium heat. Add the almonds and saute for
about 1 minute, or just until they begin to turn color

1 pound ground turkey — (or extra lean ground beef)
2 tablespoons Log Cabin Sugar Free Syrup — (maple flavored)

* NOTE: Nutrient info calculated with substitute for JO’s Sausage
Seasoning, but you may use the real thing.

Combine all ingredients and blend well.
