Light and Crispy Catfish

Serves 4
Ingredients
1 pound catfish
2 Tbsp. grated Parmesan cheese
3 Tbsp. corn meal or dried bread crumbs
½ tsp. black pepper
¼ tsp. onion powder
½ tsp. paprika
1 Tbsp. margarine

Method

1.Preheat oven to 400 degrees. Rinse catfish under cold water. Pat
dry.
2.Combine Parmesan cheese, corn meal and seasonings in a bag. Place

fillets in bag and shake to coat with cheese mixture.
3.Place catfish in a non-stick baking dish. Melt margarine and
drizzle over fish. Bake about 10 minutes per inch thickness of
fish, or until fish is just opaque throughout.

Substitutions
Flounder, ocean perch, lake perch, sole, haddock, walleye pike.
