Ingredient

4 catfish fillets (4-ounce each)
1 tbsp fresh lemon juice
1 1/3 tbsp Cajun Seasoning
Vegetable cooking spray
Lemon wedges — (optional)

Brush both sides of fillets with lemon juice, and sprinkle with
Cajun Seasoning. Place fish on a broiler pan coated with cooking
spray, and broil 5 minutes on each side or until fish flakes easily

when tested with a fork. Yield: 4 servings (serving size: 1 fillet).

There’s no better fish to showcase the spices and flavors of
Louisiana’s bayou country than catfish. Slaw and sliced tomatoes
make great go-withs.
