this is a great group. I agree with the person who wrote in and said
you have to use your judgement in using recipes and adapt if you
want, to what you can personally eat. I am a type two diet controlled
and don’t have to be as careful as those with a worse condition. I
appreciate the recipes here and agree that a good diabetic diet is
eating healthy foods. Recently I’ve had a craving for jello. I can
use the sugar free and make the lovely desserts and dishes in the
books I collect. I figure if I put fruit and vegetables in it I’m
more likely to get the servings I need a day. That way I won’t waste
as much food. Living alone and cooking for one isn’t much fun and a
lot of food goes to waste if you aren’t careful.
I left the other group because they nit picked every recipe… people
didn’t do much posting.

1 Tablespoon Chopped Tarragon
1 Tablespoon Chopped Chervil
1 Tablespoon Chopped Chives
1 Tablespoon Chopped Parsley

Instructions

Fresh Herbs

1. Chop finely and Combine.
*Because these herbs quickly lose thier flavor when heated, add to
the cooked dish at the end of the cooking process.

2 medium carrots, julienned
3/4 lbs. fresh asparagus, trimmed and halved
1/2 large green pepper, julienned
1/2 medium sweet red pepper, julienned
1/2 medium red onion, sliced and separated into rings
2 1/2 cups fresh cauliflowerets
2 1/2 cups fresh broccoli flowerets
¼ cup olive oil
1 1/2 tablespoons lemon juice
1 1/2 garlic cloves, minced
1/2 tablespoon dried rosemary, crushed
1/2 teaspoon salt
1/2 teaspoon pepper

1 cup all-purpose flour
1 cup cornmeal
¼ cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 cup 1% buttermilk
¼ cup unsweetened applesauce
2 egg whites
1 lb. turkey Italian sausage links, casings removed
4 celery ribs, chopped
1 medium onion chopped
1 medium sweet red pepper, chopped
2 medium tart apples, chopped
1 cup chopped roasted or canned sweet chestnuts
3 tablespoons minced fresh parsley

Wilted Garlic Spinach

1 teaspoon cornstarch
1 teaspoon sugar
2 tablespoons chicken broth
1 tablespoon reduced-sodium soy sauce
½ teaspoon sesame oil
6 garlic cloves minced
1 tablespoon canola oil
¾ pound fresh spinach, trimmed

In a small bowl, combine the cornstarch, sugar, broth, soy sauce and
sesame oil until smooth; set aside

In a small skillet, sauté the garlic in canola oil for 1 minute.
Stir broth mixture and add to skillet. Cook and stir over medium
heat until slightly thickened. Add Spinach; cook and stir for 2

Perch with Cucumber Relish

2/3 cup chopped seeded cucumber
½ cup chopped radishes
2 tablespoons white vinegar
1 teaspoon canola oil
¼ teaspoon sugar
¼ teaspoon dried tarragon
1/8 teaspoon salt
2 tablespoons butter
4 Perch or Tilapia fillets (6 oz. each)

For Relish, in a bowl combine the cucumber, radishes, vinegar, oil,
sugar, tarragon and salt: set aside

In a large skillet, melt butter over medium-high heat. Cook fillets
for 3 to 4 minutes on each side or until fish flakes easily with a

Donna’s Spinach Stuffed Mini Pumpkins
What A Fun Way To Eat Your Spinach!

4 miniature pumpkins
1 package (10 ounces) frozen chopped spinach
2 tablespoons butter or margarine
2 tablespoons flour
1 cup fat-free milk
1/8 teaspoon white pepper
1/8 teaspoon nutmeg
1/2 cup shredded cheddar cheese
salt and pepper to taste

Microwave each individual pumpkin for 1 - 2 minutes or until tender.
Cut top off of each pumpkin and scoop out the seeds. Discard seeds

Serves: 1

1/4 lb. lean ground beef
1 potato, Sliced
1 carrot, sliced
2 T. chopped onion
1/8 tsp. salt-free seasoning blend
Pepper to taste

Shape beef into a pattie; place in the center of a large piece of
heavy-duty foil (18-in. x 13-in.) Add potato, carrot and onion.
Sprinkle with seasonings. Fold foil over and seal well; place on
a baking sheet. Bake at 350-F for 45 minutes. Open foil carefully.
May also be grilled, covered over medium heat for 45=6- minutes or
