Creamy White Bean Soup with Cabbage and Salmon

1 cup navy beans, picked over, rinsed, and soaked overnight
2 1/2 cups water
2 cups chicken broth
6 cloves garlic, minced
1 bay leaf
2 Tbsp extra-virgin olive oil
1/2 head cabbage, coarsely chopped

1/2 lb skinned salmon fillet, cut into 1" chunks

Herbed Scallop Kabobs

Source: "The Eating Well Diabetes Cookbook"

3 Tbsp lemon juice
1-1/2 Tbsp chopped fresh thyme
2 tsp extra-virgin olive oil
2 tsp freshly grated lemon zest
1 tsp freshly ground pepper
1/4 tsp salt, or to taste
1-1/4 lb sea scallops, trimmed
1 lemon, cut into 8 wedges

Preheat grill to medium-high. Place a fine-mesh
nonstick grill topper on grill to heat.

Nutty Fruit Salad

1/2 cup low-fat cottage cheese
15 oz unsweetened canned mixed fruit, drained
1 Tbsp chopped nuts
2 lettuce leaves

Mix cottage cheese, fruit, and nuts in a bowl. Spoon onto
lettuce leaves.
