Sugar Snap Peas and Peppers

The crunch of this dish is a welcome surprise.

Number of Servings: 6 Serving Size: 1/2 cup

1 Tbsp canola oil
1 1/2 cups sugar snap peas (in shells)
1/2 cup green peppers, julienned
1/2 cup red peppers, jullienned
1/2 cup yellow peppers, jullienned
2 Tbsp light soy sauce
1 Tbsp lemon juice
ground pepper and salt, to taste

1. Heat the oil in a skillet over medium-high heat. Add
the peas and peppers and saute for 5 minutes. Sprinkle

with soy sauce and lemon juice. Grind in pepper and salt to
serve.
