Steamed Mussels with Tomatoes and Garlic

I made this up during our recent vacation on Cape Cod. It was a great
hit with everyone. It’s very low calorie and extremely low in carbs.

4 lbs. mussels (about 1.5-2 lbs. per person)
1 TBS olive oil
4 cloves garlic, crushed
2 oz. dry white wine
juice of 1 lemon
2 large tomatoes, seeded and diced
about 2 TBS chopped herbs - basil, oregano, and Italian parsley

Soak the mussels in cold water for 30 minutes. Discard any that do
not close. Remove the "beards."

In a large pot, saute the garlic, tomatoes, and herbs in the olive oil.

Add the other ingredients, mix well, and cover.
Simmer until the mussels open - about 10 minutes. Do not overcook.

Serve as is or over linguine.
