Tuscan White Bean Pizza (vegan)

One of the biggest challenges in creating vegan pizza
toppings is helping the topping stick to the pie without
melted cheese holding everything together. In this recipe,
some of the beans are tossed with tomatoes for the
topping while the rest are puréed with garlic and olive
oil into a spread that helps the topping stay put.

Vegetarian Italian Wedding Soup

Here’s a vegetarian version of Italian Wedding Soup –
traditionally a chicken broth with meatballs, pasta
and greens. In my version, I make "meat"balls with
ground walnuts, breadcrumbs, onion and parsley bound
together with beaten egg.

Vegetarian Chili

I like my vegetarian chili chock-full of vegetables –
carrots, peppers and celery — along with the kidney
beans. To keep the carnivores happy, I also add bulgar
wheat, which cooks up to a texture that’s reminiscent
of ground meat. And what chili recipe is complete
without a "secret" ingredient. I add balsamic vinegar
or vegetarian Worcestershire sauce to deepen the
tomato flavor.

Steamed Mussels with Tomatoes and Garlic

I made this up during our recent vacation on Cape Cod. It was a great
hit with everyone. It’s very low calorie and extremely low in carbs.

4 lbs. mussels (about 1.5-2 lbs. per person)
1 TBS olive oil
4 cloves garlic, crushed
2 oz. dry white wine
juice of 1 lemon
2 large tomatoes, seeded and diced
about 2 TBS chopped herbs - basil, oregano, and Italian parsley

Soak the mussels in cold water for 30 minutes. Discard any that do
not close. Remove the "beards."

In a large pot, saute the garlic, tomatoes, and herbs in the olive oil.

Jambalaya

A hallmark of Creole cooking, jambalaya is a versatile
dish that combines cooked rice with a variety of
vegetables-like tomatoes, onions, and green peppers-almost
any kind of meat, poultry, and shellfish. Jambalaya
recipes vary from cook to cook and ingredients are
often added depending upon what’s at hand. Here’s one
of our favorite versions that’s sure to become a
favorite with you, too.

Number of Servings: 8 Serving Size: 1-1/4 cups

1 Tbsp canalo or corn oil
2 each medium onion, chopped
1 each green bell pepper, cored and peeled
2 ech celery, chopped

Cranberry-Lime Punch

from traditional recipe.

Number of Servings: 10 Serving Size: 8 oz

6 cups water
1 can frozen Cranberry Juice Cocktail
1/2 cup fresh lime juice
6 packets Equal
2 cups ice cubes
1 cup Diet Ginger Ale
1 each lime sliced

Combine water, cranberry juice, lime juice and
Equal® in punch bowl; stir until Equal dissolves.
