Couscous Spinach Salad

Yield: 8 servings (8 cups total)

1 cup Homemade Chicken Broth or canned reduced-sodium
chicken broth
3/4 cup uncooked couscous
1/2 cup light Italian salad dressing
2 cups well-washed, shredded, tightly packed
fresh spinach
12 cherry tomatoes, halved
One 8-ozcan water chestnuts
1 cup well-washed, tightly packed whole
fresh spinach leaves, for serving


In a saucepan, bring the chicken broth to a boil. Stir in
the couscous and remove from the heat. Cover and let stand
for 5 minutes. Add the salad dressing. Cover and chill.

To serve, toss the coucous mixture with the shredded
spinach, tomatoes, and water chestnuts. Serve on the
whole spinach leaves.
