A Taste of California Slaw

Slaw:
2 cups (8 oz) shredded cabbage
2 green onions with green tops, sliced
1/2 cup sliced celery
1/2 cup thinly sliced carrot
2 oz provolone cheese, cut into thin strips
1 clove garlic, minced
1 small jalapeno pepper, seeded and minced
1/2 red bell pepper, cored, seeded, and cut into thin strips
1/8 tsp celery seed

Baby Corn In Jalapeno Vinaigrette

One 15-oz can or two 7-oz jars whole baby corn cobs,
rinsed and drained
1/4 cup chopped cilantro
1/4 cup red or white wine vinegar
2 Tbsp olive oil
1 small jalapeno pepper, seeded and minced

Combine all the ingredients in a glass dish; refrigerate,
covered, and marinate at least 2 hours or overnight. (The
mixture may be refrigerated up to 3 days.) Drain the corn
before serving chilled or at room temperature.

Unfried Fish Sandwiches

1/4 cup nonfat or reduced-fat mayonnaise
2 to 3 tsp dill or sweet pickle relish
2 tspfinely chopped onion
1/4 tsp dry mustard

white fish fillets, cut into 4 equal pieces
1/4 cup plus 2 Tbsp fat-free egg substitute
1/2 cup Special-K cereal crumbs

Salmon with Roasted Plum Tomatoes

4 medium-large plum tomatoes, cut into 3/4-inch chunks
1 Tbsp balsamic vinegar
1 tsp crushed garlic

1/4 tsp salt
1/2 tsp coarsely ground black pepper
Olive oil cooking spray

Roast Chicken with Corn Bread Stuffing

1 1/2 tsp dried rosemary leaves, divided
1 1/2 cups thinly sliced celery

1/4 tsp dried thyme leaves
3 cups corn bread stuffing mix
1 1/2 cups reduced-sodium chicken broth

Couscous Spinach Salad

chicken broth
3/4 cup uncooked couscous
1/2 cup light Italian salad dressing
2 cups well-washed, shredded, tightly packed
fresh spinach
12 cherry tomatoes, halved
One 8-ozcan water chestnuts
1 cup well-washed, tightly packed whole
fresh spinach leaves, for serving

Herring Supreme

One 12-oz jar herring in wine sauce, rinsed,
drained, and cut into bite-size pieces
1/2 cup light sour cream
1/4 cup fat-free mayonnaise
2 medium carrots, peeled and shredded
1 medium green bell pepper, cored, seeded, and diced
1 medium apple, peeled, cored, and diced
3/4 cup chopped onion
1 Tbsp fresh lemon juice
2 tsp sugar
1 tsp celery seed

Tuna Nicoise

Yield: 6 servings (4-1/2 cups total)

One 6-1/2 ounce can water-packed tuna, drained and flaked
1 medium potato (5 oz), cooked, peeled, and cut into wedges
1 cup sliced mushrooms
One 9-oz package thawed frozen whole green beans,
or 12 oz fresh green beans, blanched
1/3 cup Basic Vinaigrette, or prepared light Italian dressing
6 leaves leaf lettuce
1 large hard-cooed egg, peeled and sliced
2 tsp drained capers

Combine the tuna, potato, mushrooms, and green beans in a large
bowl. Gently toss the dressing with the tuna mixture. Chill.
